HARVEST

By hand, at the end of October. Normally montepulciano is harvested in the half of October. For Rosalia, harvesting the old organic vines is delayed till end-October.

WINE MAKING

Our grapes are quickly taken to the winery, cooled to 5°C and kept at low temperature. Then they are crushed in the absence of oxygen and the best quality must is separated. Fermentation Is at a controlled temperature.

AGING

After fermentation, the wine is put in stainless steel vats to clarify and mature. Continuous monitoring, decanting and remuage bring definite organoleptic characteristics and quality to the wine. The next April, the wine is bottled. After one month of maturing in the bottle, the wine is ready for sale.

MEANING OF THE NAME: the name recalls the medieval gateway of Montefiore dell’Aso, our local village (Porta Canapale). The gate is all that remains of a more complex system of defensive and fortified walls, which overlooked our Val d’Aso.

WINE MAKING

Our grapes are quickly taken to the winery, destalked and crushed, then put in vats to ferment. Here the skins and must ferment until all the sugars are finished.
Fermentation takes about 20 days.

 

AGING

After fermentation the skins are separated and the wine left to rest. It clarifies for 6 months in stainless steel and then put in large wooden vats to mature for 24 months.
When the aging is deemed ideal the wine is bottled and 6 months later is ready for sale.


COLOUR Ruby red with intense purple reflections

ORGANOLEPTIC QUALITIES

On the nose, red fruits from the montepulciano, spices form the sangiovese and vanilla from the wood. An ethereal, determined, delicate and soft wine.

ORGANIC WINE

Primo Delia is a wonderful red wine from the Marche region.
It’s barrel aged and has an intense ruby red color, like the passion we have for our territory and the work we invest in each season, each gesture, and each and every moment.

For us this wine is not just an excellent label. 
Primo Delia represents an act of love towards our grandparents, Primo and Delia Centanni, who started with a single bunch of grapes and were able to cultivate a dream.

When Delia confessed Primo’s wish to us, she did it with the sincerity and passion typical of the people from Marche.
It was during a grape harvest many years ago when that thought became an idea, which then became a dream and then…

HARVEST

There are 5 different types of grapes and each has its own maturation, so they are collected at different times. Once they reach the right degree of phenolic and sugar ripeness the grapes are harvested by hand, put in crates and transported immediately to the winery to be perfectly handled.

FERMENTATION

The grapes are de-stemmed and lightly crushed. Subsequently, the crushed grapes are conveyed to the fermenters, which are small and connected together by a replacement system, to start the fermentation at a controlled temperature.

The maceration lasts for about 250 days at a temperature of 20°, after which they proceed to the storage and aging in steel.


REFINING

After 1 year of aging in steel and the end of malolactic fermentation with continuous remuage, the wine is aged for 1 year in large wooden barrel of 100 litres.

HARVEST

When the grapes are perfectly ripe they are harvested by hand. We use only small containers, which are transported immediately to the winery to be processed. Harvesting is either early in the morning or in late afternoon to avoid the heat of the day. The harvest is usually from the in late August or early September

FERMENTATION

After careful selection the freshly picked grapes are taken to the cellar. Here soft pressing is followed by an immediate lowering of the temperature to improve decanting and the removal of suspended matter in the must. Fermentation takes place in stainless steel tanks at a constant 10°C. 

Once fermentation is finished, the cloudy wine is put into perfectly clean tanks to clear. Around January, the wine is removed from the heavy lees and put into barrels of 30hl capacity wood. The aging takes place in wood with continuous “riddling” for about six months.

In February, the wine is clarified, filtered and bottled.
It is ready for sale in March following the harvest.

“PuroCentanni Rosso” is obtained from a blend of grapes such as: 50% Sangiovese 30% Merlot 20% Montepulciano.The cut was studied after many tests carried out for years by Giacomo Centanni. A wine without added sulphites as per regulation, analytically lower than 10mgr / lt of So2.

PuroCentanni Rosso è ottenuto da un bland di uve quali:

50% sangiovese 30% Merlot 20% montepulciano.

Il  taglio è stato studiato dopo moltissime prove svolte per anni da Giacomo Centanni.

L’uva biologica viene raccolta perfettamente integra e sana in cassette, al punto giusto di maturazione.

L’uva viene portata in azienda velocemente senza essere schiacciata ed inizia subito la lavorazione con l’utilizzo di gas inerti.

L’uva viene fatta maturare al massimo, senza andare incontro a marciumi, per concentrare la componente tannica delle tipologie che servirà a proteggere il vino.

La fermentazione naturale viene svolta con le bucce in tini di legno. Il tutto senza l’aggiunta di prodotti chimici ed in particolare di So2.

Il lievito, durante la fermentazione alcolica, produce piccole quantità di So2 quale autodifesa naturale.

Un vino senza solfiti aggiunti come da regolamento, analiticamente non deve superare i 10mgr/lt di So2.

Finita la fermentazione, il vino verrà stabilizzato con l’utilizzo del freddo ed imbottigliato.

PuroCentanni Bianco è ottenuto da uva Pecorino 87% e Pinot Grigio 13%. Un taglio studiato dopo moltissime prove svolte per anni per poter comporre la
D.O.C. Falerio-Pecorino da Giacomo Centanni.

L’uva biologica viene raccolta perfettamente integra e sana in cassette, al punto giusto di maturazione.

L’uva viene portata in azienda velocemente senza essere schiacciata ed inizia subito la lavorazione con l’utilizzo di gas inerti necessari per evitare le ossidazione del mosto.

Il mosto fa una leggera maturazione sulle bucce in modo da estrarre più tannino possibile dalla varietà ed aiutare a difenderci dal processo ossidativo.

Al mosto, una volta reso limpido, vengono aggiunti lieviti selezionati che svolgeranno una fermentazione alcolica naturale a temperatura controllata. Finita la fermentazione per l’illimpidimento del vino si utilizza il freddo.

Quando il vino avrà raggiunto limpidità e stabilità, sempre sotto gas inerti, verrà imbottigliato.

Il tutto senza l’aggiunta di prodotti chimici ed in particolare di So2.

Il lievito, durante la fermentazione alcolica, produce piccole quantità di So2 quale autodifesa naturale.

Un vino senza solfiti aggiunti come da regolamento, analiticamente non deve superare i 10mgr/lt di So2

This Aged Grappa is obtained by careful and expert distillation of fermented marc of our organic white Pecorino grapes.

Distilled according to a traditional method, this grappa is aged in 320-liter French oak barrels -Allier- for over 12 months.

It is harmonious, full-bodied, yet not aggressive, to the palate, with hints of vanilla, yeasts and honey.

It pairs well with semi-dark chocolate or with good medium-aged cheese.

This aromatic wine distillate follows a long established tradition of this area.

Our own recipe of seasonal fruits and natural spices is added to the high alcohol wine.

The process is discontinuous distillation with steam.

The result is colorless and is often enjoyed at the end of a meal as a digestivo.
